Lively Lemon Bars

Preheat oven to 350ºF (175°C). Spray Stone Square Baker with canola oil using Kitchen Spritzer. For crust, combine flour and powdered sugar in mixing bowl. Add butter; blend using a pastry blender or two forks until mixture resembles coarse crumbs. Press crumb mixture onto bottom of baker. Bake 17 minutes; remove from oven to a cooling rack.
Meanwhile, for filling, zest two of the lemons using Citrus Juicer & Zester to measure 2 tsp (10 mL) of zest. Juice lemon to measure ½ cup (125 mL) juice. In mixing bowl, combine lemon zest, juice, granulated sugar; whisk together. Add eggs, egg whites, flour and salt to the bowl; whisk until blended.
Pour filling over crust, spreading evenly. Bake 20 minutes or until filling is set. Remove from oven to cooling rack. Cool completely. Sprinkle with powdered sugar. Cut into bars.

1 ½ cups (375 mL) all-purpose flour
½ cup (125 mL) powdered sugar
½ cup (125 mL/1 stick) butter
Filling
3 lemons
1 cup (250 mL) granulated sugar
2 eggs
2 egg whites
2 tbsp (30 mL) all-purpose flour
¼ tsp (1 mL) salt
2 tsp (10 mL) powdered sugar
